CHOCOLATE GANACHE CUPS WITH SWEET AND SPICY PECANS

THIS INCREDIBLY EASY RECIPE IS A STUNNER. WE USED TO SERVE THESE AT CATERING EVENTS AND EVERYONE WAS FLOORED BY NOT ONLY THE FLAVOR BUT HOW THEY LOOK.



SWEET AND SPICY NUT INGREDIENTS:
8OZ BAG OF CHOPPED PECANS
1 1/2 TBL HONEY
PINCH OF SALT
1 EGG WHITE (WHISKED UNTIL BUBBLY)
1/2 TSP CINNAMON
2TBL IT SAUCE (OR ANY HOT SAUCE)
1/4 TSP PAPRIKA

GANACHE CUPS INGREDIENTS:
2 BAGS OF HERSHEY'S DARK CHOCOLATE CHIPS
12OZ HEAVY CREAM

STEPS:
1. PREPARE THE NUTS FIRST. MIX EGG WHITE, HOT SAUCE AND HONEY TOGETHER. STIR IN PECANS.
2. PUT CINNAMON, PAPRIKA AND SALT IN A BAG WITH PECANS. SHAKE TO EVENLY COAT. 
3. SPREAD OUT ON A SHEET TRAY, AND PLACE IN A 250 DEGREE OVEN FOR ONE HOUR, STIRRING EVERY 15 MINUTES.
GANACHE CUP STEPS:
1. MELT ONE BAG OF CHOCOLATE CHIPS IN A PAN ON LOW HEAT, STIRRING CONTINUOUSLY. (OR USE DOUBLE BOILER)
2. EVENLY SCOOP INTO 12 SILICONE MUFFIN CUPS.
3. USE A SMALL BRUSH (I USED A #10 FINE ARTS PAINT BRUSH) TO BRING CHOCOLATE UP THE SIDES OF THE MUFFIN CUP. ENSURE THAT THE BOTTOM OF THE CUP HAS THE THICKEST COAT (ROUGHLY 1/2 INCH).
4. PLACE IN FRIDGE WHILE YOU CONTINUE ON.
5. USING THE SAME SAUCE POT, ADD THE OTHER BAG OF CHOCOLATE CHIPS, PLUS YOUR 12OZ OF CREAM. STIR CONTINUOUSLY UNTIL MELTED AND SHINY.
6. WHEN CUPS ARE HARDENED FROM THE FRIDGE, PULL THEM OUT AND FILL WITH CHOCOLATE GANACHE.
7. TOP WITH YOUR SPICY PEACNS OR WHATEVER NUT YOU CHOOSE.
8. PLACE BACK IN FRIDGE FOR 30 MINUTES OR UNTIL SERVING TIME, THEN GENTLY POP OUT OF SILICONE CUPS TO ENJOY.
*OPTIONAL GARNISHES INCLUDE: HONEY DRIZZLE, PAPRIKA FOR COLOR, BEE POLLEN FOR FLAVOR.
