Cóctel de Camarón

This refreshing, chilled seafood dish is perfect for a hot summer day when you're looking for something that hits the spot but is still light and bright. It differs from a typical shrimp cocktail with chopped vegetables, and a tomato based, citrusy broth. 
Ingredients:
-1 lb (16/20) Peeled and Deveined, Cooked Shrimp.
-1 Cup IT SAUCE Bloody Mary Mix
-1/2 Cup Celery, Diced
-1/2 Cup Cucumber, Diced
-1/2 Cup Avocado, Diced
-1/4 Cup Cilantro, Chopped
-1/2 Cup Red Onion, Thinly Sliced
-1/4 Cup Jalapeno, Diced
-Juice of two Limes
-Minimal Salt & Pepper to taste
-Tajin for garnish
Steps:
1. Combine all ingredients, minus the shrimp, in a bowl, let sit for at least 15-20 minutes in the fridge before service. Add shrimp shortly before serving. (The acidity of the broth will change the texture of the shrimp over time, so adding the shrimp shortly before service is preferred).
