Door County Cherry and Pomegranate Salsa

This tomato-free salsa is a refreshing, spicy, and extremely delicious way to use up your $45 bucket of cherries you just picked! We are fortunate to live only an hour away from Door County where some of the midwest's best cherries are grown, and we love to take a day trip to pick a good 5-10lbs, but then we are left with figuring out what exactly to do with them all. We thought a cherry salsa sounded like something fun and different, and the flavor is next level!



INGREDIENTS:

1.5 Cups Cherries, Pitted and Diced (we used Benton Cherries)

1.5 Cups Pomegranate Seeds

1 White Onion, Diced

2 Jalapenos, Diced

1 Bunch of Cilantro, Finely Chopped

Juice of 2 Limes

2 Tbl Rocoto

2 Tbl Honey

1 Tbl Cumin

1 Tbl Coriander

Salt to Taste

STEPS:

Mix all ingredients together and enjoy with chips or on seafood, pork or poultry.
