Grilled Baby Potatoes with Spicy Goat Cheese Crema

We took a regular baked potato and created an elevated version of it! You can use baby potatoes, Yukon golds, or even fingerlings for this recipe. 

Grilled Baby Potatoes with Spicy Goat Cheese Crema

INGREDIENTS:
- 2lbs Baby Potatoes, quartered
- 2 Tbl Finely Chopped Rosemary
- 2 Tbl Finely Chopped Thyme
- Olive Oil to Coat ~1/4 Cup
- Salt and Pepper to Taste
- 1 Cup Sour Cream
- 4oz Crumbled Goat Cheese
- 3 Tbl Criolla-Honey IT SAUCE (or to taste)
- 2 Tbl Mayo
- Salt and Pepper to Taste

STEPS:
1. Toss Potatoes with Olive Oil, Salt & Pepper, and Herbs.
2. Place the potatoes either in a vegetable grill pan or on tin foil onto a 450 degree grill.
3. Mix Sour Cream, Goat Cheese, IT SAUCE, Mayo, Salt & Pepper to create your Crema, set aside. 
4. When potatoes are tender (roughly 30-40 minutes, depending on potato size) remove from grill and plate on top of a dollop of crema.
Serve alongside steak, chicken or seafood for a complete and simple dinner!
