Honey Soy Glazed Pork Fried Rice
For breakfast on the go, a side to a delicious brunch, or a late night snack, you'll find this Honey Soy Glazed Pork Fried Rice will become one of your new go to meals!
The recipe is fairly easy, especially if you're good at chopping vegetables, and the fried rice reheats really nicely so this dish is great for meal prepping and reheating at work or for quick dinners.
What you'll need:
- 1 lb sliced pork loin
- 4 cups cooked, day old rice
- 1 tbs Avocado Oil
- 3 large eggs, beaten
- Salt to taste
- 1 bunch scallions, finely sliced
- 2 tbs fresh ginger, grated
- 1/2 cup frozen peas
- 3/4 cup carrots, diced
- 3/4 cup celery, diced
- 4 tbs IT SAUCE Honey Soy Glaze : Get it Here
- *optional* slices of radishes for garnish and crunch.
Once your ingredients are all chopped, minced and prepped, the rest is easy!
First sauté your carrots and celery in Avocado oil for a few minutes until they start to get a little tender.
Add the pork and cook for another 2 minutes until pork is nearly cooked through.
Next add your rice, ginger and beaten eggs, stir to combine, warming the rice and cooking the eggs. continue to stir.
Add add your frozen peas, scallions and Honey Soy Glaze.
Salt to taste and garnish with radish slices.
*Optional breakfast option would be to add sunny side up eggs on top of the final dish.
If pork isn't your favorite protein feel free to substitute for tofu, beef, chicken, turkey, or even just mushrooms!
