PORK TENDERLOIN WITH VEGETABLE SAUTE AND SPICY BACON-ONION JUS.

Pork tenderloin is wonderfully tender, easy to cook, and we are exited to share a restaurant quality, composed dish with you!
-2 Pork Tenderloins
-1 Lb Bacon, cut to lardons
-1 Yellow Onion, diced
-1 Tbl Whole Grain Mustard
-1 Tbl Tomato Paste
-1 Pint Chicken Stock
-3 Tbl IT SAUCE
-3 Sprigs Fresh Thyme
-2 Bulbs Fennel, Sliced
-2 Cups Kale, Chopped
-2 Apples (honey crisp), sliced
-1 Stick of Butter
-Salt and Pepper
STEP ONE: Start your bacon-onion jus. Cut the bacon into Lardons, or thin, small strips and cook in a sauce pan. Strain grease.
STEP TWO: Add the diced yellow onion, whole grain mustard, tomato paste, chicken stock, sprigs of thyme and IT SAUCE to the bacon and let reduce over low heat until its a nice, thick consistency.
STEP THREE: In another pan saute the fennel, kale and apples in butter and season with salt and pepper, cook until fennel is tender and kale is wilted.
STEP FOUR: Season your pork tenderloin and cook however you prefer. We opted to grill whole and pulled it at 130 degrees internal temperature, and let it rest to come up to 135 degrees.
STEP FIVE: Make sure everything is heated nicely, plate and enjoy!
