Salmon Bowl with Rocoto-Greek Yogurt Dressing

Who doesn't love a salmon & rice bowl? They're healthy, delicious, easy to meal prep, and you can switch out veggies as you please so you never get sick of them! This spicy version includes cucumbers and a rocoto-greek yogurt dressing so you can effectively cool your palate between bites. Here's how to make it:
Ingredients: (Makes around 4 bowls)
1 Lb of Salmon
3-4 Cups Cooked Rice
Vegetables of choice: Cucumber, Avocado, Jalapeno, Scallions - thinly sliced.
1 Bunch of Cilantro
1/2 Cup Plain Greek Yogurt
3 Tbl Rocoto
1 Tbl Honey
Cajun Seasoning, to Taste
Steps:
- Portion and season your raw salmon filets with Cajun Seasoning.
- Sear salmon, skin side up, on a medium-high skillet.
- Sear for 2 minutes (do not flip), and move pan with salmon into a 400 degree oven.
- Keep an eye on salmon for desired doneness.
- In a separate bowl, mix Greek Yogurt, Rocoto and Honey until combined.
- Assemble your bowl, drizzle salmon with a little extra Rocoto. Enjoy!
