Salmon Cakes with IT SAUCE Aioli
Here is the perfect little bite for entertaining or just an awesome late night snack! If you have leftover salmon, this is an easy and tasty way to utilize it.

2 Cups of Smoked Salmon
1 Shallot, finely diced
1 Jalapeno, finely diced
2 Tbl White Wine
1 bunch green onions, finely diced
12oz Cream Cheese
1/2 Cup Mayo
1 Tbl Coriander
2 Tbl IT SAUCE, Criolla-Honey
3 Cups Panko Bread Crumbs

STEPS:
1. After all your vegetables are chopped, cook your shallot and jalapeño in the white wine until soft and shallot is translucent.
2. Mix together Salmon, Shallot & Jalapeño mix, Green Onion, Cream Cheese, 1/2 Cup Mayo, Coriander, IT SAUCE and 1.5-2 Cups of Panko in a large bowl, until combined.
3. Form mixture into small patties - if you need more panko based on how packy your mix is, feel free to add.
4. When all salmon cakes are formed, place on a baking sheet and bake at 400 for 15 minutes or until panko begins to turn golden brown. OR your can pan sear in butter to get a nice browned salmon cake.
5. Mix 1 part IT SAUCE with 2 parts mayo for the perfect aioli to enjoy cakes with.
