Seared Scallops with Orange-Soy Broth
When you're short on time, this quick and easy scallop dish is the well-rounded, bright and fresh dish you need in your arsenal. With minimal ingredients, this flavor packed entree is quick and simple!
INGREDIENTS:
-4-5 Scallops per person
-2 Tbl Avocado Oil
-4 Tbl Honey Soy Glaze
-Zest, Juice and segments of an Orange, to taste
-1/4 cup thinly sliced Scallions
-Cilantro to taste
-Salt and Pepper to taste
-Sesame Seeds to taste
STEPS:
- Remove scallops from packaging and pat dry with paper towel, dry them as much as possible.
- Season scallops with Salt & Pepper
- Get a sauté pan hot. Once the pan is hot - add your avocado oil.
- Let the oil get hot, until shimmering.
- Before adding your scallops, again, make sure they are dry. Gently add them to the pan, setting them in away from you. Therefore if the oil spits - you aren't getting burned.
- Do not try to move the scallops until they release from the pan - this is when your sear is hard enough. If your scallops are sticking, let them be.
- Once they release and you are able to flip them, flip for a quick 45 seconds on side two.
- Remove from the pan and place them on paper towel or a wire rack, they are going to purge.
- While scallops rest for a minute, combine Honey Soy Glaze, Fresh squeezed orange juice, and orange zest. Mix well and plate at the bottom of your serving dish.
- Add your scallops to the plate and garnish with scallions, cilantro and sesame seeds.
