1 CUP DICED CELERY
1 CUP MINCED RED ONION
1 CUP MINCED POBLANO PEPPERS
1 CUP ROUGHLY CHOPPED CILANTRO
1 CUP MAYO
1 CUP SOUR CREAM
16OZ GOAT CHEESE (ROOM TEMP)
1/2 CUP HOT SAUCE (IT SAUCE, CRIOLLA-HONEY)
1/4 CUP WHOLE GRAIN MUSTARD
JUICE AND ZEST OF 4 LIMES
APPROX 3 CUPS OF PANKO BREAD CRUMBS
2TBL FISH SAUCE
SALT AND PEPPER TO TASTE

-SEASON YOUR SIDE OF SALMON WITH SALT AND PEPPER, THROW IT ON YOUR SMOKER AT ROUGHLY 200 DEGREES FOR 15 MINUTES, OR UNTIL DESIRED DONENESS.
-REMOVE SALMON SKIN (IF THERE IS SKIN)
-IN A LARGE MIXING BOWL, COMBINE SALMON WITH ALL INGREDIENTS MINUS YOUR BREAD CRUMBS.
-ADD BREAD CRUMBS AS A BINDER AS NEEDED.
-SHAPE YOUR SALMON CAKES, AND ROLL IN EXTRA PANKO.
-SEAR IN A MEDIUM-HIGH HEAT PAN WITH COOKING OIL, ON BOTH SIDES UNTIL GOLDEN BROWN.
-POP IN YOUR OVEN AT 350 FOR 10 MINUTES.
TOP WITH REMOULADE OR IT SAUCE MIXED WITH MAYO!
