Spicy Sweet Potato Gnocchi

Gnocchi is a variation of pasta-like dumplings and in this recipe we used sweet potatoes as the main ingredient. With only a few other ingredients this recipe is fairly quick and pretty easy!




INGREDIENTS:

One 1lb Sweet Potato, Cut & Baked or Boiled until fork tender.

1 Cup Whole Milk Ricotta Cheese

1/4 Cup Pamesan Cheese

1 1/2 tsp Salt (to taste)

1/ 1/4 Cup Flour, plus a little for dusting

3 Tbl ROCOTO

3 Tbl Butter

1/2 lb Bacon, cut into small pieces

2 Cups Green Beans, cut in half.

STEPS:

  1. Once your sweet potatoes are baked, run it through a food processor or ricer until smooth.
  2. Combine the sweet potato, ricotta cheese, parmesan cheese, salt, and flour. Mix until the dough starts to come together adding flour as needed. 
  3. Roll dough mixture into a long thin tube, about 1" thick, and cut to desired, bite sized pieces.
  4. Bring a pot of water to a boil, salt liberally, and cook gnocchi until they float on the surface. Remove and set aside.
  5. Cook your bacon pieces in a pan over medium heat, until they are almost cooked as desired.
  6. When bacon is almost cooked to desired doneness, add your green beans, your ROCOTO, butter and your cooked gnocchi. Sauté until gnocchi begin to slightly brown.
