Spicy Sweet Potato Gnocchi
Gnocchi is a variation of pasta-like dumplings and in this recipe we used sweet potatoes as the main ingredient. With only a few other ingredients this recipe is fairly quick and pretty easy!
INGREDIENTS:
One 1lb Sweet Potato, Cut & Baked or Boiled until fork tender.
1 Cup Whole Milk Ricotta Cheese
1/4 Cup Pamesan Cheese
1 1/2 tsp Salt (to taste)
1/ 1/4 Cup Flour, plus a little for dusting
3 Tbl ROCOTO
3 Tbl Butter
1/2 lb Bacon, cut into small pieces
2 Cups Green Beans, cut in half.
STEPS:
- Once your sweet potatoes are baked, run it through a food processor or ricer until smooth.
- Combine the sweet potato, ricotta cheese, parmesan cheese, salt, and flour. Mix until the dough starts to come together adding flour as needed.
- Roll dough mixture into a long thin tube, about 1" thick, and cut to desired, bite sized pieces.
- Bring a pot of water to a boil, salt liberally, and cook gnocchi until they float on the surface. Remove and set aside.
- Cook your bacon pieces in a pan over medium heat, until they are almost cooked as desired.
- When bacon is almost cooked to desired doneness, add your green beans, your ROCOTO, butter and your cooked gnocchi. Sauté until gnocchi begin to slightly brown.
