Wild Rice and Fennel Stuffing
This wild rice and fennel stuffing is a great twist on a classic stuffing. You can either stuff inside your turkey or use as a side dish to accompany your Thanksgiving meal.

- 2 Cups Cooked Wild Rice
- 2 Heads of Shaved Fennel
- 1 Thinly Sliced Yellow Onion
- 1 bunch roughly chopped Cilantro
- 1 Cup thinly sliced Green Onion
- 3 TBL Butter
- 2 TBL Olive Oil
- Rocoto Hot Sauce for Deglazing
- Salt and Pepper to Taste

- In a heavy bottom pot, combine butter, olive oil, shaved fennel and yellow onion.
- Render over low to medium-low heat for approximately 20 minutes, or until clear without any browning.
- Add 2 cups of cooked wild rice, green onions and cilantro.
- Season with Salt and Pepper to taste
- Add Rocoto to finish, approximately 3 TBL or to taste.
