Smoked Turkey Roulade
You were asking for alternatives to regular turkey and we came up with this beautiful turkey roulade dish that is sure to impress your guests and save time so you can enjoy the holiday, too!

- 1 Turkey Breast, Pounded thin -or- seamed out.
- Salt and Pepper to Taste
- 3/4 - 1 Cup Wild Rice & Fennel Stuffing
- Lay your flattened turkey breast out.
- Spread the Wild Rice & Fennel Stuffing down the middle, the long way.
- Roll from one end, as tightly as possible.
- Wrap tight in plastic wrap and refrigerate for 12-24 hours.
- Put on a 275 degree smoker (or oven) and baste with Spicy Cranberry Barbecue every hour, until you reach an internal temperature of 155.
- Pull off the smoker, or out of the oven, and cover with foil, let rest for 30 minutes prior to slicing.
- Serve your beautiful turkey roulade rings with a swipe of Cranberry Barbecue and enjoy!
